Our inventory planner Kata is a baker extraordinaire – having owned and operated a pastry shop in a previous career, she’s always sharing her delicious desserts with those of us lucky enough to work with her. This is another one of her special recipes, originating from her husband’s family in Guadalajara, Mexico. Trust me, these cookies are delicious!
- 350 grams unsalted butter
- 500 grams flour
- 100 grams sugar
- 1 teaspoon baking powder
- 4 egg yolks
- The rind of 1 lime, grated
- a touch of vanilla
- 1/2 teaspoon cinnamon (for coating)
- 1/2 cup sugar (for coating)
Combine butter, sugar, flour and baking powder. Work with your hands until it becomes a crumbly texture. Add egg yolks, grated lime rind and vanilla and mix until smooth. Place on cookie sheet in balls 1 inch in diameter. Press down on the top of the dough to flatten slightly. Bake at 350F for 15-20 minutes, or until golden brown.
Remove from oven and cool partially. Combine cinnamon and sugar, and when cookies are still warm, but not hot, coat them in the mixture. Enjoy!
